Knights Cafe employees pose for a picture by the cafe.

The Knights Café opened up on the first of September for their second year of serving coffee to their fellow students.

The students opened their doors to a new year of new ideas and possibilities for the café. This year the café will be open for three days a week compared to two days a week last year. The menu consists of coffee, iced coffee, hot chocolate, variety of teas, and even lemonade. There is one new thing that the students will be excited for.

“We bought some freeze pops that we will sell for a dollar. We’re looking to sell little snacks once in a while too,” said teacher Kelly McIntyre.

The Knights Café has been here for two years, but not everyone knows why they started.

“The point of the café is to develop pre-employment skills for students in the building with an in-school worksite where they work on different skills and job readiness,” McIntyre said.

Some of the employees have their favorite drinks.

“[My favorite drink on the menu is] the hot mocha,” said junior Patrick Miner.

With the success of the café for the past two years,  McIntyre had a few ideas for the future Knights Café.

“We like to become a little booming business, and since we started very small and with the school getting used to it, we became very successful. We learned so much and made so many improvements, and getting different departments involved. We would also love if community members come in and see our café, and maybe have the mayor come in and go behind the counter with the kids for day. We also talked about opening a coffee truck one day and going to the Grayslake farmers market and Grayslake festivals and things like that,” McIntyre said.

Some of the students working in the Knights Café have been working in the café since last year, but there are some new people in there too.

“[My favorite part of working in the Knights Café is] greeting customers,” said sophomore Michael Dionido.

With the new arrangements of the café, people like math teacher Matthew Zaluckyj will try and go more for the drinks and company.

“I try to go twice a week, but now since they’re open for another day, so probably at least twice. I usually get an ice coffee, well except whenever I get a morning coffee, and I usually get the tea as well,” said math teacher Matthew Zaluckyj.
